The start of this new school year finds me at home. I am on maternity leave until October 10, but have decided to try out the blogging thing once again. This year is going to be busy...I already feel busy just taking care of my two children, cleaning the house, and having meals on the table. I can only imagine how I will feel in another month when I add a brand new job on top of it all. I like to be proactive about changes, so I am trying to plan my meals ahead of time and freeze as many meals as possible. So, for the next month expect most of my posts to be about food - recipes I like/don't like, ideas for new recipes, and my struggle to make delicious healthy food.
This morning I made pomegranate and blueberry gelatin. I got the recipe from Simply Sugar Free and Gluten Free blog I didn't have bananas or apple juice in, so I used pom juice and just blueberries. This was a huge hit with both my son and me. We each had one with lunch, and I can't wait for him to wake up so we can have another for snack.
